Nghêu rửa sạch, ngâm với nước pha 1 muỗng cà phê muối khoảng 30 phút. Sau đó, cho nghêu vào nồi nước cùng gừng cắt lát, 1 muỗng canh rượu trắng, nấu lửa nhỏ để nghêu hé miệng.
Vớt nghêu ra, để nguội, tách lấy thịt nghêu, bỏ vỏ rồi cho ra đĩa.
Trứng gà đập ra tô, thêm 1/2 muỗng canh nước tương, 1/2 muỗng canh dầu mè, 1/2 muỗng cà phê tiêu, khuấy đều, lọc qua rây. Cho tiếp thịt nghêu vào.
Cho hỗn hợp trứng gà, nghêu ra thành 2 chén. Nên chọn những chén chịu được cách nhiệt tốt.
Dùng màng bọc thực phẩm, bọc miệng chén lại. Lấy tăm xiên lên màng bọc thực phẩm khoảng 3-4 lỗ, cho vào xửng hấp, hấp chín khoảng 10-15 phút.
